EtsyBloggers: June Blog Carnival - Favorite Summer Recipe
This was hard. I tend to be a light eater during the summer. I also have a hard time with inventing recipes and just making them up as I go. But then I thought of this versatile quick, easy recipe that can be used as a salad, dip, appetizer or on pasta. You can adapt this to fit any of your favorite tastes.
BLT Salad
crispy bacon - use as much as you want!
1/2 c mayo
1/2 green onion (sometimes I use white)
3T Parmesan cheese
2T Parsley
Cherry Tomatoes*
Mix all the ingredients together. Toss on a salad or pasta. I think this could also be used as a dip with your favorite crackers. Just cut up the cherry tomatoes small.
* cut the middle out and stuff the cherry tomatoes with the mixture to make an appetizer.

YUMMY! I am definitely going to try, sounds perfect for a tossed salad on a hot summer night!
ReplyDeleteI heat tomatoes every day for lunch, just with cut cheese and oilive oil. This would make for a nice change!
